Each ingredient is deducted at its yield, so on-hand stock moves in real time without anyone touching a sheet.

Stock-takes run per area on a phone. Variance is written to waste, not silently absorbed.

Anything below par becomes a draft PO, rounded to pack size and grouped by supplier delivery day.

Supplier price lists update dish costs nightly; a morning WhatsApp flags outs, breaches and price rises.
